I’m super excited for Saturday because I’ll be running  the Seattle Rock ‘n Roll Half Marathon and then watching the US vs Ghana game post race.  Two of my favorites: running and soccer.  Plus, the weather is supposed to be perfect for running.  Parly sunny and 68-70 degrees.

I received a request from some of you asking me to make another core video.  No problem.  here ya go:

Second request asked for recipes.  Hmmm…I have a TON of recipes, however, do not get the idea that I cook.  I love food and love the idea of cooking, but don’t do much of it.  Breakfast is my favorite meal of the day, so I do have some breakfast recipes to share that I do and have made myself (even if just once). 

However,  my mom is an excellent and healthy cook.  I’m so fortunate to live only a few miles from her and so, therefore, I”m a beneficiary of her meals on a pretty frequent basis.  She can cook some delicious and easy meals.  In fact, I’ll soon be videoing her and sharing some of her cooking.  The other night she made a meal “spur of the moment” that included prawns, spinach, pine nuts, and garlic.  Simple and Yummy.

In the meantime, here are some of my favorite breakfast recipes:

Protein power breakfast: this is one serving: 10g protein, 30g carb, 340 calories

1 tablespoon flaxseeds                                                                                                                                                                                                                                                                                                                                                                                                                                                  1 tablespoon sesame seeds                                                                                                                                                                                                                                                                                                                                                                                                                                          2tablespoonssunflower  seeds                                                                                                                                                                                                                                                                                                                                                                                                                                                                                       1 teaspoon honey                                                                                                                                                                                                                                                                                                                                                                                                                                                          ½ medium banana, sliced

Grind all seeds together in your coffee grinder. Place seeds in a cereal bowl. Add honey and a small amount of hot water. Mix together and top with sliced bananas. (I once made this for my brother and he told me I eat like a bird with all those seeds)

Mexican Egg Scramble: this is one serving. 14g protein, 30g carbs, 300 calories

  • 2 organic eggs, scrambled
  • 1/2 cup leftover brown rice
  • 1/4 cup black beans
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon sea salt
  • 1/2 avocado diced
  • 1/2 cup salsa

Combine rice, beans and seasonings in a skillet; cook over medium heat.

In separate skillet, prepare eggs however you desire

When eggs are finished and rice and beans are warm, serve together on a plate. Top with avocados and salsa

Breakfast Smoothie: 20g protein, 40g carbs, 375 calories

  • 2 tablespoons protein powder ( I use a brand called Whey Factor, chocolate flavor)
  • 1/2 cup organic fresh berries (or frozen)
  • 1.5 cups soy, almond, or rice milk

Place all ingredients in blender and blend to desired thickness and consistency.
